Le Chef:

I got my cooking secrets and traditional French recipes from my grandmother, a genuine “cordon bleu” chef. As a student, I worked in several famous French and Italian restaurants in Los Angeles to share my passion of food over the ocean, but quickly came back. Now to enjoy my love of passing my knowledge of French cooking, I'll invite you to my place for a fun cooking class.

The art of fine dining, the choice of selecting ingredients and the mastery of French cooking will be shared with you. I will also share his secret recipes of traditional French dishes with my own personal twist.

 

A special moment:

A second floor apartment of Paris is an unlikely place to find a ‘gourmet French restaurant'. Far from the over-polished spoons at stuffy star-studded restaurants, is a cooking class that opens its doors to all, for one of the most unique dining experiences you'll find in Paris. Unlike other French cooking lessons, this culinary class treats guests more like fellow foodies, rather than just another student with an apron and a chopping board.

The idea is simple. An English-speaking Parisian, with a passion for food, is guiding guests through the smells and sights at the local farmers market, before inviting them home for a moment of cooking and conversation. Wearing an unmistakably pink shirt, I will greet our intimate class,maximum 6 guests, outside Metro Saint Mandé and take you shopping to select the finest seasonal products from the best farmers in town.

After squeezing into possibly the Guinness World Record holder of Worlds' Smallest Elevator, you will enter into a spacious city apartment and I hope my warm hospitality will put the room at ease. Sharing the granite kitchen bench tops we'll start the cooking together and you will have no other option but help with the preparation, chop and peel away! We will discuss the obvious differences between French food and the others and I'll tell you more about our tradition of sharing meals in France. I'll do my best to give you the right impression about French family food.

After an hour and a half of preparation, the long-awaited moment will arrive and we will sit down to feast on our achievements.

Small-Group Food Tasting with Wine Pairings in Paris

Just sit back, relax, and observe the creativity and expertise of the chefs for this unique dining experience with delectable French dishes and wines. The chef and sommelier are here to keep you entertained while teaching you skills and easy to remember guidelines about French wine and food pairing that surely will come in handy at any of your future events.

The menu is decided by the chef and is based on what is fresh and in season. While a menu is not provided ahead of time, you can indicate at time of booking if you have any dietary restrictions that the chef should be aware of when composing his menu.  The event will end around 10pm.

Paris Market Tour and Cooking Class

Learn the art of French cooking in the heart of the Montmartre district during a hands-on cooking class taught by a professional chef. Start by meeting the chef at a Paris market, and create a seasonal 4-course menu together from raw ingredients. Visit a butcher, fish monger, cheese shop, bakery, and vegetable shop, and take everything back to the cooking school, where you'll prepare your meal. Then enjoy your lunch or dinner—a nonstop learning process from the market to the plate. All food and wine is included. Class size is limited to seven people to provide a small-group experience.

NOTE: Please be aware that this class runs either in the morning (from 9 am), or in the evening (from 5pm). Pay careful attention to the time you are booking.

Your Paris culinary experience starts by meeting your chef-guide in Montmartre, where you'll take a 1.5-hour tour of a local market.

Like a fine-dining restaurant, you will create the menu, learning how to select top-quality produce from the market and meeting local merchants. Then head back to the cooking school a few minutes away, where aprons, cutting boards, and chef's knives are provided, to begin your hands-on lesson from starter to main course to cheese platter to dessert.

At the end of the 1.5- to 2-hour lesson, sit down around the cozy dining table and enjoy your 4-course meal together, including a fine selection of cheeses from the market and French wine. Spend the next hour and a half taking your time to relax, discuss the recipes and savor the exquisite food.

Mother of All Sauces - Introduction to French Sauce Making

When you have a good stock, you have a good sauce. When you have a good sauce you have good food. Learn the basics of French sauce making in the Mother of all Sauces.
 
This class offers a good introduction to French sauces as elaborated by chef Auguste Escoffier. Traditional French cooking has always been about the sauce and stock. A whole kitchen station was dedicated just to this task. This is a fundamentals class and will prepare you to take your sauces to the next level.

In this class the sauces are the stars. We will prepare simple meat, fish and vegetable dishes to accompany our sauces. Leanr to make a stock - the essential base for any good sauce. We will also teach you how to clarify butter as well as variations of sauces to enlarge your sauce-making library.
 
Of course as usual, everything will be fresh and in-season, so the accompanying recipes will vary based on what is available.

French Choux Pastry Class : Eclairs, Chouquettes, Paris-Brest

Learn to make the versatile French pastry dough, the pâte à choux which is used to make éclairs, cheesy gougères, the gauteau Saint-Honoré and the Paris-Brest.

This year, our choux pastry class, focuses on the French wedding "cake", the Croque en bouche, which means "crack in your mouth", describing the crunchiness of the caramel topping on these custard cream-filled pastries. You will learn how to make the pâte à choux, a nougatine base for your pièce-montée, a custard cream for the filling and caramel for dipping.

Leave with your very own creation and of course sample some in class.

In our Mad About Choux Pastry class you will learn to make from scratch, the pâte à choux. With this base, the skies the limit with what you can do with it - you may even invent your own choux dessert or apéritf who knows!
 
We'll be focusing on one use of this dough recipe in particular, the croque-en-bouche, that conical tour of cream puffs, which often makes its presence at French weddings in place of a wedding cake. We will make the nougatine base, the caramel, the custard cream filling and form our masterpiece.

We'll sample some of our creations in class and you can take the rest home to share.

The 4-hour class will reveal the secrets to making the classic pastries that adorn the finest Parisian bakery windows. In 2018, we will focus on the millefeuille, starting with the mastering of the pâte feuillété (puff pastry).

Meet in Paris' 18th borough in early afternoon, be introduced the the Chef, don your provided apron and start preparing. You will also be provided with all necessary materials and ingredients for the class.

In the next few hours you will learn to make exquisite French pastries from an expert chef, and work with tried and tested recipes that can be recreated at home. Learn the art of making Paris Brest, a dark chocolate tart, Mille-feuille, and the famous Baba au Rhum. You will be using Valrhona Chocolate in the class made from the purest cocoa beans renowned for outstanding quality. For your information this class also requires the use of gelatin.
 
The class requires you to have certain level of experience in baking as some more advanced methods are used during the session. Beginner bakers should try their hand at the operator's Bistro French desserts class.

If you choose the market tour option, you'll start at a Parisian outdoor market to help your chef pick out the fresh, local and seasonal products you'll use for your meal, such as poultry, seafood, seasonal vegetables and spices. I have to feel butter and flour in my hands.” In addition to her incredible passion for food and cooking Anne loves finding things at the flea market, walking through Paris and stopping in every pastry shop to eat. Enjoy a Modern French Cooking Lesson and Meal with a Parisian in her Home

Aurore has the most fascinating, interesting and diverse background. Her mother is half Vietnamese, half Indian; her father is half Italian half Ukrainian and her husband is French, making Aurore truly a world citizen! Aurore is a native of Paris, a self-taught cook, who inherited her love for cooking at an early age. She was truly lucky to learn cooking from her parents who came from such a diverse backgrounds and fondly remembers helping around in the kitchen doing small chores like cutting carrots for dinner. She learned from her parents to cook Vietnamese, Indian, Italian, Ukrainian and French food and now wishes to share this knowledge with her children as well!

Aurore's mother cooked almost every single meal, and Aurore does the same for her family as well. Aurore loves to cook from scratch and uses only the best ingredients; she also knows the origin story of every ingredient she uses, as she believes they are at the heart of what she does. “I'm very proud when my 5 year old son tells me that his hachis parmentier (shepherd's pie) at school wasn't good because there wasn't any garlic, or nutmeg!“

Paris Croissant and Traditional Breakfast Pastry Class

Bring home the tastiest of souvenirs with this 3-hour tour. You will learn the technique for making delicious buttery croissants. Which is something that not many people have ever mastered.

Croissants were once made from plain old ordinary bread dough; nowadays, they are made from pâte feuilletée levée (layered yeast-leavened dough). It is surely one of the most technical dough in French pâtisserie.

After 3 hours spent with our chef, you will have acquired the know-how to make croissants that are light, crispy on the outside and melt-in-your-mouth soft on the inside. You will learn and perform each step in making classic butter croissants and croissants with almonds, but you will also learn how to make pain au chocolat (chocolate-filled croissants), pain aux raisins (raisin croissants) with pastry cream, and other variations of the croissant that are as delicious as they are unexpected.

You will learn some specific techniques :

  • Make the Detrempe: mixture of flour, water, salt, butter, yeast, used in the preparation of croissant.
  • Make the Beurrage: to add butter to the dough that is called pâton.
  • Pâton : the block of croissant dough after the butter has been folded into the detrempe to form an envelope.
  • Make the turns: to give turns to the croissant dough (pâton) by rolling the dough and folding it.
  • Feuilleter (to make into leaves): enclosing the butter in a layer of dough and folding and rolling the dough to form thin layers or leaves.
  • Abaisser ( to roll out): to roll out a sheet of pastry dough to the desire thickness with a rolling pin, before cutting and shaping it.
  • Follow la pousse (the fermentation and the rising) : the expansion of the fermented dough caused by the yeast during the rising.
